"Pilaf Index": How much has cooking pilaf in Uzbekistan become more expensive in a year?
From July 2025 to July 2026, the cost of ingredients needed to cook osh increased by 7 to 10 percent across regions. The largest price increases were observed in Khorezm, Andijan, and Bukhara regions. In particular, in July last year, in Khorezm, 1 kilogram of osh cost 106,000 soums, while this year this figure has reached almost 118,000 soums.

The National Statistics Committee publishes the average prices of ingredients needed to cook 1 kg of pilaf by region at the end of each month. Based on this data, Kun.uz analyzed the changes in the prices of preparing pilaf, the main national dish of Uzbekistan.
According to the results of July, in Tashkent, 1 kg of pilaf will cost 128,730 soums. In Fergana, the cost of ingredients is also higher than in other regions, amounting to 125,283 soums. In Karakalpakstan, 1 kg of pilaf costs the cheapest - 107,396 soums.
These prices include 8 products: 0.7 kg of beef, 1 kg of laser rice, 0.3 l of sunflower oil, 1 kg of carrots, 300 g of onions, 100 g of peas, 10 g of cumin and 20 g of table salt.

It turned out that from July 2025 to July 2026, the price of ingredients for pilaf increased by more than 10 percent in the Khorezm and Andijan regions, and by more than 9 percent in the Bukhara region and the city of Tashkent. In Samarkand, Tashkent, Syrdarya, Kashkadarya and Jizzakh, "pilaf inflation" amounted to 7 percent.
For information, the Statistics Committee announced the inflation rate in Uzbekistan at 6.4 percent as of July 2026. In particular, the annual increase in food prices was also 6.4 percent. It is noteworthy that in almost all regions, the increase in the price of pilaf was higher than the official food inflation rate.
